In honor of the 10th anniversary of St. Augustine Distillery, we created this bourbon from four of the oldest barrels in our collection. Each aged over 9 years, these barrels lost over 60% of their original volume during the initial aging period. The result? A one-of-a-kind Florida bourbon that will not be seen again.

This bourbon marks the third installment of our Explorer’s Collection, a line of luxury bourbons finished in specialty casks sourced from across the globe by our distilling team. After the initial 3 year aging period, our Florida Bourbon spent an additional two years in Apera Sherry casks, developing a dark hue and a rich flavor profile with pronounced sweetness and oak.

94.0 Proof - Like all of our Florida bourbon, this spirit started with an initial aging process in flame-charred American oak barrels. However, we didn’t stop there: we transferred our mature Florida bourbon to a lightly toasted oak barrel for a final finish that imparts notes of vanilla, marshmallow, and malt.

106.16 Proof - Filled on New Year’s Eve 2017 and aged for 5 years, this spirit is the perfect toast to 2023. This single barrel bourbon is sweet and toasty with notes of vanilla, cinnamon, nutmeg, and clove, reminiscent of the autumn season when it was first barreled.

110.4 Proof - This citrus-kissed bourbon was aged for three years in brand new charred American oak barrels before an additional two-year finishing period in 190L curaçao casks. This is the second release in our Explorer’s Collection, a line of luxury-finished bourbons showcasing the finishing power of spirits from around the world.

118.5 Proof, Unfiltered - Aged for 6 years and 160 Days, we only produced 140 bottles of this very special cask-strength spirit featuring notes of sweet plum, vanilla, tobacco, baking spice, clove, and cardamom.

94.0 Proof - This complex, fruit-forward rum is rooted in community collaboration. Named for our friends at San Sebastian Winery just a “stone’s throw” away from our distillery, our distillers aged new make rum in freshly dumped San Sebastian Winery port barrels that originally held our Florida Straight Bourbon.

63% ABV / 126 Proof - Named for our beloved “Day One” Danny Rodriguez, the very first hire in St. Augustine Distillery’s history, this decadent rum features notes of overripe bananas, tropical fruits, and burnt sugars. The label features five blue stars in tribute to the flag of Danny’s home country, Honduras.

50% ABV / 100 Proof - We partnered with our friends at San Sebastian Winery to finish our New World Gin in port wine barrels for six months. The result is a peppery, floral, and more earthy gin that celebrates sustainability and local collaboration.

93.9 Proof - Florida Double Cask Bourbon was the very first bourbon release in our distillery’s history. Made from a mash bill of 60% corn, 22% malted barley and 18% regional wheat, this well-balanced spirit was barreled in 25-gallon American Oak barrels before being moved to 53-gallon barrels to prevent over extraction.

100 Proof - We only produced 1,200 bottles of this unique spirit, which we made by aging our New World Gin in oak barrels that once held the world’s finest sweet white vermouth. This aging process imparts a softer, rounder, and more complex flavor profile savored by gin enthusiasts from all walks of life.

100 Proof - This well-rounded and complex spirit was made by aging our New World Gin in oak barrels that once held the world’s finest red vermouth. Like its sweet white vermouth counterpart, only 1,200 bottles of this gin were ever produced.

The Discovery Series marks our first rum release in distillery history. Made with Florida’s long rum tradition in mind, all four spirits in this collection were fermented and distilled on-site using select, premium regional sugarcane syrups and molasses in our copper pot stills.
